Jalapeño Cheese Snack Sticks Recipe





This jalapeño cheese snack sticks recipe by Age of Anderson on YouTube is a snack stick that is keto-friendly and a great appetizer to have on the go. The cheese chunks in the sausage sticks and spicy jalapeños. I love meat snacks because they go well for charcuterie boards too, and easy snacks for your kids. I love how it’s spicy because it adds more flavor and the casings give it a nice snap.

Ingredients:

  • 15 lbs of meat (2:1 lean to fat ratio)
  • 1 1/4 cup dry milk powder
  • 3 tsp cure #1
  • 2 tbsp garlic powder
  • 6 tbsp plain salt
  • hot sauce or jalapeño powder
  • dehydrated jalapeños and high temp cheese
  • 1 1/2 cup ice-cold water, wine, or beer

Supplies:

  • sausage stuffer
  • collagen casings

Directions:

First, mix all of the seasonings together in a container and set aside. If you buy the meat at a butcher’s place, let them ground the meat up so you don’t have to do it at home if you don’t have the machine. Pour half of the spices into the ground meat while it’s still cold, fold it into the meat. Add the hot sauce, the rest of the seasonings, and cold water. Mix everything together.

Next, get the sausage station ready by taking the sausage mixture, and packing it in. Create the snack sausage links and hang them on dowels or sticks. Overall, I love these jalapeño cheese snack sticks because they remind me of slim jim except it’s homemade. This may seem complicated if you don’t have the sausage stuffer to make this, but I think it would be worth investing money to buy your own. I’m sure there are some machines that aren’t too pricy either.
