I think it’s a unique cookie recipe because it’s not a traditional cookie that you would bake during the holidays. However, this is perfect for kids and can be made for Christmas parties. They look so good, and they remind me of the traditional shortbread cookies with a jam filling. This would cater to those that love peanut butter and jam, and you can choose any type of jam too.
- 1/4 cup + 3 tbsp of Unsalted Butter (at room temperature)
- 1/2 Cup of Caster Sugar (Super Fine White Sugar)
- 1/2 Cup of Brown Sugar
- 1 tsp of Vanilla Extract
- 3/4 Cup of Peanut Butter
- 1 Egg
- 1 1/4 Cups of Plain All-Purpose Flour
- 1 tsp of Baking Powder
- Approx. 1/3 Cup of Jam (I used Raspberry Jam)
First, in a large mixing bowl, add room temperature butter, peanut butter, white granulated sugar, brown sugar, and vanilla extract. Use a hand mixer to beat all of the ingredients together until it’s light and fluffy. Then, beat the egg into the mixture. Next, once the cookie dough is ready, roll them into a ball, and place them on a baking tray with parchment paper. Use your thumb to create an indentation at the center of the cookie, and fill the center with jam. Bake in a preheated oven at 320F for 12-15 minutes.
Overall, I would love to make this cookie, and it would be a great way to eat PB&J instead of a sandwich. This would be fun to make because I would add different types of jams for variation.
