Banana Bread Bottom Cheesecake Recipe

  • 1 tablespoon gelatin powder

Topping:

  • whipped cream, optional

First, set the oven to 350 degrees F. In a large bowl, mash the bananas with a fork and add the oil, egg, sugar, and vanilla. Stir until combined. Next, once the banana bread bottom has baked in the oven for 30-40 minutes, combine cream cheese, sugar, and vanilla in a separate bowl. Microwave the milk for about 2 minutes until hot, then add the gelatin powder. Stir until the gelatin is dissolved. Combine the gelatin mixture and cream cheese together until smooth. Pour the cheesecake mixture over the banana bread crust and chill for 3 hours or overnight.
