The cheese that oozes out in the middle of this bacon-wrapped meatloaf by RuledMe on YouTube looks amazing and it is a low-carb meal. It is packed with lots of flavors and it’s super meaty. This is perfect for those that are on a keto diet because it’s high in fats. I love the weaving of the bacon on the outside and the golden brownish-red color looks delicious. I’m amazed by the bacon, and this would be tasty for meat lovers too. Serve this meatloaf alone or with your favorite sides.
- 1 pound ground beef
- 18 slices bacon
- 1 cup almond meal
- 1 cup shredded cheddar cheese
- ½ cup diced canned mushrooms
- 1 medium diced shallot
- 1 large egg
- 2 teaspoons fresh thyme
- 1/2 tablespoon salt, or to taste
- 1 teaspoon mustard powder
- ½ teaspoon Worcestershire sauce
- ½ teaspoon pepper
First, lay down about 8 slices of bacon and fold every other bacon in half to weave the bacon under, over, under, and over. Then lift the half pieces back up and weave until finished to the bottom. Next, place the grill on top of the meatloaf pan and flip the pan over so that the meatloaf can sit on the wire rack. Bake at 300F for 1 hour or until the internal temperature hits 160F.
Overall, this isn’t a hard recipe to make, and it is unique compared to other meatloaf recipes. I haven’t had meatloaf in so long, but bacon is a nice addition to the texture of the ground meat. I think it would taste good with ketchup so that it is extra moist. However, I think the bacon does a nice job to keep the meat from drying out on the inside.
