I think shrimp would taste super fresh in this recipe and chopped raw asparagus or cucumbers. Macaroni salad is one of my mom’s favorites growing up, she would always buy some from the store. Now, I could take this recipe and try it out for myself. This is a creamy macaroni and tomato salad that is vegetarian-friendly too. - 1 pound macaroni, cooked
- 1 (32-ounce) can petite diced tomatoes
- salt, to taste
- black pepper, to taste
First, mix the canned tomatoes with mayonnaise until you get a pinkish color.
Then, mix the cooked macaroni noodles and the tomato mayonnaise mixture together. Season with salt and pepper. Stir until everything is fully incorporated.
It’s unbelievable how simple this recipe is, and there are so many ways to use this recipe as a base and add other ingredients to it. The only cooking needed for this recipe would be the macaroni noodles. Everything will be stirred and mixed together. I’m glad this isn’t one of those fancy dishes, because simple meals are always tasty too. This is an inexpensive dish to make if you’re on a budget too. I’m thinking about all of the possibilities and ingredients I would add to this recipe to make it my own such as cayenne pepper to make it spicy.
